LOBO WINES + TRUFFLE SHUFFLE
A GREAT HOME COOKING EXPERIENCE
I must say that while my home bar skills vastly improved during the pandemic, my cooking skills did not. I am no chef, that’s for sure. So when the folks at Lobo Wines and Truffle Shuffle offered the opportunity to cook lemon ricotta gnocchi from home, I wasn’t very confident in my abilities but the end result was some delicious pasta and a damn good time.
The goal was to cook lemon ricotta gnocchi with a sage brown butter sauce from scratch. Needless to say, this was a first for me. But how could I say no to truffles? They are after all, delicious and highly sought after for their distinct earthy flavor and scent.
Just as a little FYI about Truffle Shuffle, it’s the brainchild of former French Laundry chefs who set about to provide the finest truffle products and consciously sourced and traced fresh truffles. The truffle lovers believe that a dish made with fresh truffles and a few simple ingredients can create special, ever-lasting memories for diners.
The Zoom cooking experience, where imbibing was encouraged, was a fun and loose session. Directions were easy to follow, even for this novice chef.
The provided ingredients included ricotta, butter, flour, egg yolks, sage leaves, truffle salt, parmesan cheese, lemon, and truffe carpaccio. The Michelin starred chefs walked us through the steps involved to make a sage brown butter sauce, as well as kneading knuckle sized gnocchi pieces.
The flavorful gnocchi paired perfectly with a 2018 Lobo Wines Chardonnay. The pairing was out of this world perfect.
This cooking experience proved to be fun and fabulous resulting in a mightily delicious meal. It even left me encouraged to try to make another dish from scratch. And that statement piles on big props to the Truffle Shuffle team.
