ARIA’S JEAN GEORGES STEAKHOUSE
FINE DINING DONE RIGHT

Taking a fresh and modern approach to the traditional American steakhouse, award-winning chef Jean-Georges Vongerichten challenges the definition of the traditional chophouse by adding a strong dose of energy and world-class appeal at his stylish and contemporary Jean Georges Steakhouse located at the ARIA Resort & Casino in Las Vegas.

With a daring menu that features the highest quality meats and seafood from around the world, complemented by an innovative array of side dishes and homemade sauces, as well as an extensive bar program focusing on classic cocktails, must-have signature dishes include the Black Pepper Crab Beignets with Asian pear and lime dressing, the Spiced Veal Chop with roasted peppers and proscuitto jus, as well as the Broiled Bone Marrow with parsley-lemon gremolata.           

Decorated with a black and ochre color palette lit by ambient amber lighting that creates a warm and cozy space punctuated by abstract cow-face cut-outs, ceramic table tops and a glazed lava rock bar, luckily the setting isn’t overly pretentious as the cool rocks playing in the background, ranging from the likes of Cake, Blondie and INXS, help keep it real. Be prepared to indulge your taste buds with wonderful and daring fare.

With first-rate and extremely attentive service, your time dining at Jean Georges Steakhouse (which is pricey so beware) is the perfect place to relax and treat yourself right, hopefully with the big winnings from your stay in Vegas, otherwise just consider this personal pampering time.

During our recent visit, we opted to let the Chef send out his personal favorites and trusted Lead Sommelier Kim Wood to pair each course with the appropriate wine.

We began our decent into delectable dining Nirvana with the refreshing Watermelon Gazpacho. This was paired with a tasty Gimenez Riili, Torrontéz, La Rioja 2009.

Up next was the savory Crispy Bacon Spring Roll with papaya mustard and cilantro, presented with a glass of Lucien Albrect, Riesling Reserve, Alsace 2008. The mouthwatering taste of the Crispy Bacon Spring Roll was perfectly balanced by this wonderful white wine.

Round Three featured the succulent Rice Cracker Tuna prepared with a Citrus-Sriracha Emulsion and paired with a Robert Sinskey, Pinot Blanc, Los Carneros 2008. On their own, both of these, the delightful tuna and the flavorful wine, are winners, but together they make for quite the fabulous course.

This was followed by the Cocount Chicken Soup with distinctive taste and a nice glass of Heidi Schrock, Muscat, Rust 2007.

Treated to a scrumptious Roasted Chilean Sea Bass glazed with Miso-Yuzu Glaze and served with grilled Maitake mushrooms, it was wonderfully paired with a Bergström, Cumberland Reserve, Pinot Noir, Willamette Valley 2008. A big fan of sea bass, this one was top notch.

And just when you thought dinner couldn’t get any better, or perhaps because by this point we were starting to get satiated, it was time for our hearty main entrée from the wood-burning grill, and that meant the juicy NY Strip served with a side of Roasted Royal Trumpet Mushrooms with garlic and jalapeño, and the finger-licking Broiled Bone Marrow with parsley-lemon gremolata (simply a menu must-have item). These dishes were paired with a glass of Torres, Mas la Plana, Cabernet Sauvignon Penedés 2003.

And to put the final, decadent finishing touch to this world-class dining experience, it was time for the best-selling Molten Lava Chocolate Cake with a side of ice cream. Life doesn’t really get any better than this particular moment.

The newest hotel on the Strip, ARIA is definitely laying its claim to be the new must-visit resort and casino and dining at Jean Georges Steakhouse only adds to the swagger and bravado it can proudly boast.
