Now, as we find ourselves in the midst of the food truck phenomenon, where we can get just about any tasty, delectable treat served on wheels, if you’re looking for great gourmet burgers on the go, look no further than Baby’s Badass Burgers.

Founded by ex-New Yorker restaurateur Erica Cohen and celebrated event planner Lori Barbera, Baby’s Badass Burgers was born a year ago, just as the food truck craze was getting started.

“The trucks were just kind of coming to fruition a year ago and I just thought it would be great to do a burger truck with hot girls,” Cohen says with a laugh. “And I always wanted to do a burger joint. I think it’s cool. I think people were ready for a change. This really happened a year ago when the economy turned.”

The story goes that Cohen launched her career in the restaurant world as one of the founding partners in the first of The ONE Group’s many restaurants. A passionate foodie and burgermeister at heart who had long been “searching for the perfect, quintessential cheeseburger,” Cohen decided that in order to satiate her quest she would have to create her own flawless burger: the Simple Original Beauty on the BBB menu (originally Erica’s Badass Baby Burger from both the east coast and west coast One restaurant menus).

Responsible for opening such hot spots around town such as STK and Coco De Ville, Cohen and Barbera’s Baby’s Badass Burgers offers hearty, affordable burgers without the fuss.

Recently featured on the season premiere of HBO’s “Entourage,” Baby’s Badass Burgers can be found once a week on Pennsylvania Ave in Santa Monica, as well as the UCLA campus twice a month, and at The Brig on Abbot Kinney in Venice every Sunday. All of Baby’s burgers are made with ground Angus Beef, and all burgers are served as sliders that come in a pair and you have the option to “Man Up” and double your meat, or order the Maneater size that is a half-pound burger. During our recent visit to the badass burger-mobile, we opted for a cross selection of their signature bites. You just have to start with the zesty Original Beauty, prepared with Swiss cheese, grilled onions, sautéed mushrooms, and baby’s special sauce. Gotta have it!

“The Original Beauty is our classic signature burger Cohen points out. “People love it. I love the Cougar (aged beef, St. Andre cheese, black truffles) when I’m feeling really decadent but The Original Beauty is my favorite.”

Up next was the All American Girl, prepared with smoked cheddar, lettuce, tomato, pickles, and baby’s special sauce. This one is a hearty, classic burger.

And to round out our menu tasting we went with the She’s Smokin’ chicken sandwich that’s made with BBQ sauce, smoked cheddar and crispy onions. Loaded with a savory BBQ taste, it’s spicy yet flavorful. And you just have to counter these burgers and sandwiches with their tasty Sweet Potato Fries.

Teaming up with Chef Jason Ryczek, who had served as the Executive Chef at ONE Sunset, the burger brain trust played mad scientists experimenting with different burgers but ultimately always knew what they wanted on their menu.

“The Original Beauty is Erica’s Badass Burger from the restaurant,” Cohen notes. “I wanted a super high-end burger with truffles (Cougar), and I wanted a classic which is the “All American Girl” and I wanted something with spice, a little bit of heat, which is the “Mamacita” and obviously we needed a veggie burger (Au Naturale).”

Looking ahead, the beautiful burger babes are looking to launch a NY truck as well as open a brick and mortar location, as they continue to carve out their niche among the slew of food trucks about town.

“Now there are a million trucks,” Cohen says of the current food truck craze. “There’s a dumpling truck, a pizza truck, there’s every kind of truck. It’s really cool because now it’s a cult following but what once was more specialized is now mainstream. My ultimate goal is to open a spot, to open a Baby’s Badass Burger joint.”
